Why not try this cheesy, creamy recipe for Zucchini Gratin?
900g small zucchini, shredded on the large holes of a box grater
salt and black pepper
1/2 small onion, finely diced
1/2 cup heavy cream
1/2 cup shredded Gruyere cheese
Put the shredded zucchini in a colander, and toss with 1/2 teaspoon salt. Let stand for at least 5 minutes, then squeeze as much of the liquid out of the zucchini as possible using your hands.
Melt the butter in a saute pan. Add the onions, and cook until softened. Add the zucchini, stir, and cook for a few more minutes until the zucchini is just softened. Add the cream, and simmer until thickened.
Remove the mixture from the heat, and season to taste with salt and pepper. Transfer the mixture to a baking dish, and top with the shredded Gruyere.
Bake in a 180 degree oven until the cheese is melted and the everything is heated through.
