A recipe for Wholewheat Gnocchi with Vegetables and Herb Chicken that’s as comforting as it is healthy.

Ingredients
1 pkg. Wholewheat Gnocchi
2 cups Broccoli
2 cups Cauliflower
1 Red Pepper
1 Zucchini
1 cup Pearl Onions
1 tsp. Olive oil Butter
Chicken(you can use any parts)
Italian Herbs
Rosemary
Olive Oil
Sweet red paprika
Salt and pepper to taste
Basil
Thyme
Garlic

How to
Make a rub for the chicken: Italian herbs, crushed garlic, rosemary, salt, pepper, olive oil, red paprika. Mix all together and rub all over chicken.(or you can marinate overnight)

Preheat the oven on 200C

In a large skillet add a bit of olive oil and place the chicken into the hot oil.

Let the chicken’s skin get crunchy, after that transfer into preheated oven and bake for 30 minutes, depending on what chicken parts you use; Also oil the baking pan with Olive oil!

After about 15 minutes of baking add pearl onions on the side of the chicken (but before season with salt and pepper)

In a mean time boil salted water, cut all the vegetables, and place in the water to cook for few minutes or more.

The last thing that you want to make is the gnocchi.

Boil salted water and let the gnocchi cook for 3-5 minutes – drain and cover.

Drain the vegetables, pour bit of olive oil, and season with Italian herbs, chopped fresh basil, salt, pepper, bit of thyme.

Add vegetables to a pan – add olive oil or butter; saute for a few minutes for the vegetables to absorb all the spices.

Add veggies to the gnocchi, place chicken on the side of the plate and place a few spoons of roasted pearled onions on top of the gnocchi.
