This isn’t just any boring salad recipe – the Haloumi cheese is so flavoursome and has a slight sweetness from the grilling that is just incredible.

1/4 cup olive oil
1 tablespoon butter
2 baby eggplants sliced
6 or 8 large cherry tomatoes halved
250g Haloumi sliced about 1/2 cm thick
handful of rocket leaves
Basil leaves, about 1/3 of the amount of rocket
1 tablespoon balsamic vinegar
