These Strawberry Pavlova Cupcakes make a great lunchbox treat
1 x 500g Sasko Quick Treats Vanilla Muffin Mix
140ml vegetable oil
2 extra-large eggs
1/4 cup pureed strawberries
1/4 cup castor sugar
1/4 cup water
2 egg whites
1/2 cup castor sugar
1/2t white vinegar
Preheat the oven to 180C.
Beat the oil, milk and egg together with a whisk in a mixing bowl.
Add the muffin mix to the egg mixture. Mix with an electrical beater on low speed or by hand with a whisk for 1 minute.
Divide batter between 12 cupcake wrappers in a muffin pan. Fill muffin cups to 3/4 of the height.
Make the strawberry sauce by simmering the puree, sugar and water until thickened. Set aside.
Whip the egg whites until stiff peaks form and gradually add the sugar and vinegar until thick and glossy.
Top the cupcake batter with a small amount of the strawberry sauce in the middle and a tablespoon of meringue and bake for about 15 minutes at 180C.
Spoon the remaining sauce over the cupcakes just before serving and serve with whipped cream on the side.
