These Coconut Drop Cookies will have you reaching into the cookie jar again and again
1/3 cup vegetable oil
1 cup corn syrup/ agave syrup/ maple syrup
1 egg beaten
1/2 teaspoon salt
3 tablespoons cornstarch
1 3/4 cups bread flour
2 teaspoons baking powder
grated rind 1/2 lemon
1 cup desiccated coconut
1/2 teaspoon orange extract
First pour the Mazola into a mixing bowl
Add the syrup, egg and the other ingredients mentioned.
Drop by small teaspoonfuls onto a oiled pan, sprinkled thickly with coconut
Bake in a moderate oven, 180C to 190C for fifteen minutes.
