There is no excuse not to eat healthy with this delicious recipe for Cauli Fried Rice with Thai flavours

1 head cauliflower
½ bunch leeks
1 garlic clove, diced
½ spring onion, sliced
2 Tbsp. coconut oil, divided
A dash of rock salt
½ tsp. chili powder
2 eggs
1 Tbsp. tamari
¼ cup cashews, chopped

How to
Heat 1 Tbsp. coconut oil in a large pan and fry leeks and garlic.

Place cauliflower in food processor and blend until “rice like,” then add to pan.

Add rock salt to taste, chilli powder and 1 Tbsp. coconut oil.

Add spring onion and any other green veggies you like, then create a space in the middle.

Crack an egg in the middle and fry the rice and veggies with the egg.

Cook until cauliflower is golden and veggies are cooked through, then add tamari.

Sprinkle with cashews and serve.
