Deliciously healthy recipe for Sweet Potato Mash. It goes well with chicken, lamb, fish or lentils
2 large orange sweet potatoes, peeled and cut into small cubes
1/3 cup milk of choice
1 tbsp organic butter or cold-pressed extra-virgin olive oil
1 tbsp ground cinnamon + extra (to serve)
Himalayan salt and ground pepper
Place the sweet potatoes in a large saucepan, add enough water to cover and bring to the boil
Reduce the heat to medium, cover and simmer for 10-12 minutes or until the sweet potatoes are tender. Or you can steam them.
When the sweet potatoes are soft and tender, drain and return to the saucepan. Add the milk, butter or olive oil, cinnamon, salt and pepper and mash together using either a potato masher or stick blender. Serve sprinkled with a little extra cinnamon.
