Start your meal off with this recipe for Potato Stuffed Peppers
4 Bell Peppers
1/4 Tbs. Olive Oil + 1 tsp. for greasing the pan
1/2 teaspoon Salt
3 Large Potatoes, shredded
1 Yellow Onion, shredded
Salt to taste
1 teaspoon Ground Black Pepper
Few Sprinkles of Chili peppers
1 Tbs. Olive oil
1 teaspoon sour-cream per pepper (optional)
Preheat the oven to 190C
Wash peppers and cut in the half.
Take all the seeds out.
Sprinkle with bit of salt and just lightly oil them.
Place in the oven and pre-bake for 10 minutes or until you are finished the filling.
In the meantime peel and shred the potatoes, and onion.
Add salt, ground black pepper, and chili peppers to taste.
Mix the filling until well combined.
Take the peppers out of the oven and stuff them with the filling mixture.
Once you done stuffing all the peppers, cover the baking pan with aluminum foil.
Bake on 190C for 35-40 minutes or until potatoes are done.
After the potatoes are done, take the foil off and bake for additional 10 minutes.
