Banting recipe for Spanish Prawns with Chorizo – serve with an avocado and cherry tomato salad

800 g (21/25) prawns with the shell on and
1 tsp smoked paprika
1 tsp dried oregano
3 clove(s) of garlic, sliced
1 lemon, juiced
salt and pepper
Large knob of butter
200 g chorizo, peeled
4 Tbsp chopped parsley
a little extra lemon for seasoning

How to
Place the prawns in a bowl and sprinkle with the paprika and oregano. Leave to marinate for 5 minutes.

Heat a large frying pan and melt the butter.

Fry the chorizo in the butter until nice and crispy. Remove from the pan and set aside.

Fry the prawns in the pan until they just turn pink all over. Add the chorizo to the pan and toss everything together. Sprinkle with the fresh parsley and season with a squeeze of fresh lemon.

Serve immediately with an avocado, spring onion and cherry tomato salad.
