Recipe for Soba Noodles topped with a mince stir-fry and an Asian style sauce
1 tbsp soy sauce
1 tbsp rice wine vinegar
1 clove garlic – peel, grate finely & chop
10g ginger – peel & chop finely
1 tbsp sweet chilli sauce
125g steak mince
1/4 red onion – peel & slice thinly
50g green beans – trim ends & cut in half
1 spring onion – slice thinly at an angle
1/4 pack soba noodles
olive oil (from your pantry)
salt & pepper (from your pantry)
Preparation: Prepare all ingredients as indicated above.
Sauce: Mix together soy sauce, rice wine vinegar, garlic, ginger and sweet chilli sauce. Set aside.
Steak mince: Place a pan on medium-high heat with a drizzle of olive oil. Add the mince, season with a little salt and pepper and brown for 3-4 minutes, breaking it apart with a spoon. Remove and set aside.
Mince stir-fry: Using the same pan, turn the heat up to high and add a drizzle of olive oil. When hot, add the red onion and green beans and sauté for 3-4 minutes. When the green beans are nearly cooked, add the spring onion and mince. Cook for 1 minute, until everything is cooked, and the green beans still have a slight bite. Mix through HALF the sauce.
Soba noodles: Boil the kettle. Place a pot on medium-high heat and add the boiling water. When the water is at a rolling boil, add the noodles and cook for 2½ minutes. You want it al dente, which is slightly chewy and translucent. Drain and drizzle with a little olive oil to keep it from sticking together.
Serve the noodles topped with the stir-fry and drizzle with the REST of the sauce.
