8 beef sausages
4 onions – peel and slice finely
2 tbsp chutney
500g diced butternut
2 small loaves ciabatta – slice
2 tsp ground cinnamon
2 tsp cumin seeds
100g feta cheese – crumble
80g salad leaves
olive oil (from your pantry)
Preheat the oven to 200C.
Mix the cinnamon, cumin seeds, salt and freshly ground pepper together in a small bowl. Place the diced butternut on a baking tray. Sprinkle with the spice mixture and drizzle with a little olive oil. Place in the oven to cook for about 25 minutes. They are done if tender when pierced with a fork.
Place sliced onions in a pan with a generous knob of butter on high heat. Cook till they go translucent – about 5 to 6 minutes. Then add the sausages and turn the heat down to medium. Cook them together until the sausages start to colour and the onions caramelize – about 15 minutes. Once they are done add your chutney and a splash of water and cook until it’s all combined and then put aside.
Drizzle the ciabatta slices with some olive oil. Toast under the grill.
To serve, place some of the onion mixture on the ciabatta slices, then the sausages and some more of the onion mixture over the top. Mix the rocket leaves with the feta and place the spiced butternut on top and drizzle with some olive oil.
