Recipe for Sweet Mince Pies – perfect for Christmas time or any time – with homemade apple and lemon fruit mince

Fruit Mince:
3-4 cups Mixed Cake Mix
50gr Suet
Rind of 1 Lemon
1 Apple
1/2 cup Castor Sugar
1tsp Mixed Spice
1/4 cup Brandy

2 cups Flour
250gr Butter
1/2 tsp Salt
50ml Iced Water
1Tbs White Vinegar
1 Egg Yolk (brush with white).
Castor Sugar.

How to
For the Fruit Mince:

Grate lemon, peel and chop apple.

Shred suet and then mince all together.

Mix and mince again.

Add brandy and keep for at least 2 weeks before using.


Rub flour, butter and salt.

Beat water, vinegar and egg yolk.

Cut into dry mixture with a knife.

Put in plastic bag and chill.

Roll out very thinly, cut with cookie cutter and place in greased patty pan.

Add 1tsp fruit mince.

Top with star-shaped pastry lids.

Brush with egg white

Bake at 220 for 10 – 15 minutes.

Sprinkle with castor sugar.
