Recipe for Easy Peasy Cheesy Lasange – with four different kinds of cheese!

1 pkg whole wheat lasagna noodles
2 cups grated Mozzarella cheese
1/2 grated mature cheddar cheese
1/2 cup grated parmesan cheese
Meat Layer:

1 tbsp olive oil
1 small white onion, chopped
3-6 cloves garlic, minced (I love garlic…but use no less than 3)
1 pound ground turkey (or extra lean ground beef)
1 jar Mushroom pasta Sauce
1 can sliced mushrooms (optional…but why wouldn’t you want them in there?)
Cheese Layer:

1 small white onion, chopped
1 250g tub of 1% or fat free cottage cheese
1 egg
1/2 cup grated mozzarella cheese (not taken from grated cheese listed above)
2 tsp dijon mustard
1 pkg chopped frozen spinach (thawed and water squeezed out)
1/2 red pepper, chopped
1/2 can whole kernel corn
1 tsp coarse black pepper
1 tsp salt
1 tsp dried oregano

How to
Start the water to boil for the noodles in a big pot. While that’s heating up, heat another medium-sized pot on medium heat with the olive oil in it. Once the pot is hot, add in the onions and garlic and saute until soft. Add in the ground meat, and scramble fry until completely cooked.

At some point during this process, your noodle water will be boiling, so pop those noodles and boil as per the package instructions. When the noodles are done, take the pot over to the sink and run cold water into the pot instead of draining it. Keep running it until the water stays cold in the pot, then let the noodles sit in the cold water. This keeps them from sticking together in a collinder or drying out.

Once the meat is cooked, dump in the whole jar of pasta sauce, as well as the mushrooms. Turn down the temperature to medium-low, put the lid on, and let simmer until you’re ready to assemble the whole casserole.

Next up, the cheese layer! Combine all the cheese layer ingredients and mix it up good. SO easy.

Now, time to assemble this delicious masterpiece! Start by putting a single layer of noodles on the bottom, covering the pan. Top the noodles with all of the meat sauce. Layer that with noodles again, and top with the entire bowl of the cheese mixture. Top with a single layer of noodles one last time, and cover the top with all the grated mozzarella, cheddar and parmesan.

Bake for about 30 – 45 minutes in a 170 degrees C oven…
