A quick and easy one tray supper Roast recipe, with aubergine, cherry tomatoes, beef bangers and olives
2 beef bangers
1 aubergines – cut into cubes (1½ cm)
75g cherry tomatoes – cut in half
1/4 red onion – slice (1½ cm)
30g green olives
1 tbsp basil pesto
olive oil (from your pantry)
salt & pepper (from your pantry)
tin foil (from your pantry)
Preparation: Preheat the oven to 200°C. Prepare all ingredients as indicated above.
Roast Vegetables & bangers: Place the aubergines, cherry tomatoes and red onion on a tin foil lined tray. Drizzle with olive oil and season with salt and pepper. Mix and arrange in a single layer, roast for 10-15 minutes. Add the beef bangers roast for 15-20 minutes until golden brown and cooked. In the last 5 minutes add the olives to the tray to roast.
Serve topped with basil pesto.
