This Poppy Seed Citrus Cake recipe is a fantastic teatime treat
1 1/8 cups sugar
2 cups flour
2 1/4 tsp baking powder
1/4 tsp salt
2/3 cup orange juice
2/3 cup sunflower seed oil
1/2 cup poppy seeds
zest of 1+1/2 orange
zest of 1+1/2 lemon
For the syrup:
70ml orange juice
70ml lemon juice
3/4 cup sugar
1/2 cup water
In a large bowl pour the sugar, flour, baking powder, salt, orange juice, orange and lemon zest, vegetable oil, eggs and finally the poppy seeds.
When you mix try to incorporate air, it will make the cake more dense.
A few minutes later put the batter into a buttered baking dish and place the cake in a preheated oven at 170C for 30-35 minutes.
To prepare the syrup just put all the ingredients in a saucepan, turn on the heat and dissolve the sugar, stirring constantly.
Put it aside and when the cake is ready make some holes with a skewer and brush with half of the juice.
Let it rest and after 20 minutes pull it out of the pan and brush the surface with the remaining juice.
