Delectable and easy recipe for crunchy peanut butter cookies
½ cup butter, softened
½ cup peanut butter (crunchy or smooth)
½ cup soft brown sugar
½ cup white sugar
1 large egg
1 tsp vanilla extract
a pinch of salt
1 ¼ cup flour
½ tsp baking soda
½ tsp baking powder
Preheat the oven to 180°C. Line 2 baking trays with greaseproof paper.
Cream together the butter, peanut butter and both sugars. Beat for 4-5 minutes, until very creamy.
Add the egg and vanilla essence and mix well.
Sift together all the dry ingredients, and add gradually to the creamed mixture, beating well after each addition.
Roll heaped teaspoonfuls of the dough into balls and place onto the baking tray, 5cm apart. Use the back of a fork to press down twice in a criss-cross pattern.
Bake for 8-10 minutes, until golden and crispy. Leave to cool for a few minutes on the baking tray, then remove to a cooling rack to cool completely.
