Whip up a delicious, fruity dairy-free recipe for Orange & Thyme Crème Brule
875 ml Almond Breeze Original Almond Milk
1 stick cinnamon
Zest of 1 orange
2 sprigs of thyme
5 extra large egg yolks
160 ml castor sugar
60 ml cornflour
7.5 ml vanilla paste
Sugar for sprinkling over
Orange zest for garnishing
Heat the almond milk, cinnamon, orange zest and thyme together in a saucepan over medium heat.
Turn off the heat and leave to stand for 30 minutes to infuse.
Beat the egg yolks and sugar together until creamy and pale.
Sift in the cornflour while beating continuously.
Add a little of the hot almond milk to the egg mixture.
Mix in and keep on adding almond milk little by little.
Return to the saucepan.
Stir over low heat until the mixture starts to thicken (do not boil).
Divide between 6 lightly greased ramekin dishes.
Cool and then refrigerate for at least 3 hours.
Sprinkle sugar over.
Caramelize sugar using a blow torch.
Garnish with orange zest.
Serve at once.
