This Olive Oil Flat Bread with Herbs recipe makes a great starter
1/2 tablespoon sugar
1 teaspoon dry yeast
2 cups all purpose flour + few tbs for dusting
1 tablespoon salt
3/4-1 cup warm water
2 tablespoons pure olive oil
2 teaspoons olive oil for drizzling or brushing
Herbs: Rosemary, Basil, Oregano
Combine sugar and yeast in a bit of warm water or warm milk to activate.
Meanwhile add together flour, salt and if the yeast is activated pour in the flour. Mix, and start adding water little bit at the time, stir with the wooden spoon (I find it the best).
Oil your hands and start kneading.
Add the rest of the oil and knead until you form a ball.
Let it rise for about 45 minutes or until double in size on the room temperature.
Preheat the oven to 190C
Take it out of the bowl and place on the flour dusted surface, knead for few seconds and try to flatten the dough until you reach your desirable thickness.
Oil the baking pan transfer the flat bread.
Drizzle or brush on little bit of olive oil and sprinkle with the herbs.
Let it rise for 10 more minutes, then bake until golden brown, and approximately 30-35 minutes.
