Recipe for a go-to healthy side dish – Miso Greens

2-3 cups mixed greens (broccoli florets, chopped kale, spinach, bok choy, zucchini sliced etc.)
1 tbsp coconut oil
1/3 cup boiling water
1-2 tbsp sesame seeds

Miso Sauce
1 tbsp white miso paste
1 tbsp tamari sauce
1 heaped tbsp dijon mustard
1 tbsp sesame oil
1 tbsp sesame seeds
1 tbsp honey or maple syrup – can omit
1 tsp grated ginger
1/4 cup warm water

How To
Add all miso sauce ingredients into a bowl and whisk – set aside.

Heat 1 tbsp coconut oil in a large frying pan or wok.

When the pan is hot, add the greens and stir-fry them until they start to soften.

Add the boiling water – this helps the greens to steam up and cook.

Start to drizzle over the miso sauce above. Reserve about 2-3 tbsp of sauce for later.

Plate up the greens and drizzle the remaining sauce. Sprinkle with sesame seeds to serve.
