Easy recipe for Mini Pitas served with Red Pepper Hummus, and Chorizo & Avocado Salsa

Ingredients
About 12 slices of good quality chorizo sausage, diced
1 ripe avocado
Small handful of freshly chopped basil or coriander (or both)
Squeeze of lemon or lime juice
Salt and pepper to taste
6-8 Mini Pita Breads
1 tub of Mediterranean Delicacies Red Pepper Hummus

How to
Pre-heat your oven to 200C. Then, heat a small pan on the stove top, and add in the chorizo bits. Fry gently until they start to change color, just 3-4 minutes, stirring often. Remove, drain on kitchen paper and set aside.

Meanwhile, de-stone and roughly chop your avocado and toss with the fresh herbs and lemon/lime juice, as well as a good sprinkling of salt and pepper.

Lightly sprinkle your pitas with water, place in an ovenproof dish and then into the oven for 3-4 minutes until they are warmed through. Remove and serve with the salsa and Mediterranean Delicacies Red Pepper Hummus.
