Everyone loves Malva Pudding – so treat the family and give this recipe a shot.


2 eggs
2 cups sugar
2 t smooth apricot jam
2 cups flour
2 t bicarb of soda
Pinch salt
2 cups milk
1 t vinegar
1 T butter

2 cups cream
350g butter
2 cups sugar
1 cup hot water

How to
Preheat the oven to 180C.

Beat egg, sugar and jam together in a bowl.

Melt the butter and add vinegar. Add milk to egg mixture, alternating with the butter and vinegar.

Add the flour and bicarb. Mix well and pour into an ovenproof dish or ramekins to halfway.

Cook for about 45 minutes or 30 minutes if in ramekins, until pudding is consistently rich brown in colour.

To make the sauce:
Melt ingredients together and pour over the pudding as soon as it comes out of the oven.
