This recipe for Lemon Slices makes a fantastic dessert
250 ml Sasko Cake Flour (120g)
125 ml castor sugar (100g)
140 g cold margarine, cubed
15 ml milk
25 ml Sasko Cake Flour (15g)
375 ml castor sugar (300g)
grated zest of 1 lemon
125 ml lemon juice
4 large eggs, lightly beaten
250 ml cream
For the base:
Preheat the oven to 200C and grease a 22cm x 22cm shallow baking tin.
Sift flour and add castor sugar in a bowl. Rub in the margarine, stir in the milk and knead together to form dough. Press the dough down evenly into the baking tin and bake for 15-20 minutes until golden brown.
Remove baking tin from oven and lower temperature to 180C.
For the lemon filling:
Sift the flour and castor sugar into a bowl, add lemon zest, lemon juice, eggs and cream. Whisk to combine and pour over the base. Bake for 10-15 minutes until the top is just set.
Cool in the baking tin and cut into 12 slices.
