A super simple recipe for baked Key Lime Pie – sure to be a huge hit
1 cup biscuit crumbs
1 TBS granulated sugar
1/4 cup unsalted butter, melted
pinch of salt
1 can condensed milk
1/4 cup sour cream
1/4 cup plain greek yoghurt
3/4 cup lime juice
zest of 1 lime
250ml Fresh cream
Preheat oven to 180 degrees.
In small bowl, combine the crust ingredients with a fork. Pour into prepared pan, and press down into dish. If you like a crispier crust, bake for 5-7 minutes and allow to cool. If you don’t mind a softer crust, you can skip pre-baking it.
Whisk together condensed milk, sour cream, yoghurt, lime juice and lime zest until smooth and combined. Pour into pie crust. Bake for 8 minutes. Remove from oven and let cool completely. Refrigerate at least 4 hours or overnight.
Before serving, whip cream until stiff. Pipe onto pie and garnish with lime wedges. Enjoy!
