Its the party season and that means more entertaining – try these Honey and Chilli Prawn Skewers, they are bound to impress your guests.

500 g medium prawns, with shells
2 t (10 ml) grated lemon rind
2 T (30 ml) lemon juice
1 T (15 ml) honey
1 finely sliced red chilli
2 T (30 ml) olive oil

How to
Peel the prawns but leave the tail end intact. Strip out the veins.

Toss the prawns with the remaining ingredients and marinate in the fridge for 10-15 minutes.

Thread onto thin skewers and cook briefly in a griddle pan until just done +- 2 minutes on each side. Bring the remaining sauce to the boil to sterilise it and serve on the side for dipping.
