Interesting recipe for low GI Chocolate Cake which is made with chickpeas! It doesn’t contain any flour, butter or milk, and only has a small amount of sugar.
200g melted chocolate (if you can’t have dairy, look for one without milk in it. Quite a large variety of dark chocolate does not contain milk…)
9 tbsp sugar
Half tsp baking powder
Mash or blend the chickpeas as much as possible.
Beat in the eggs til smooth.
Mix in the sugar and baking powder.
Pour in the melted chocolate and mix well.
Transfer to a 8-inch cake tin and bake at 175 degrees C for about 40 minutes.
