A sweet and savoury recipe for Honey and Chilli Koeksusters

Ingredients

Syrup:
1 tsp oil
2 spring onions (chopped)
1 tbs garlic paste
1 red pepper (chopped)
4 tbs honey
4 tbs sweet chilli
quarter tsp soy sauce

Dough:
500g cake flour
150g potato purée*
25ml baking powder
20ml butter
1 large egg
220ml water
2 pinches of salt

Folding the Koeksusters:
1 egg

How To

Syrup:
Bring saucepan to a moderate heat.

Add oil, spring onion and red pepper, sauté for 5 minutes.

Add the honey, garlic paste, sweet chilli and soy sauce.

Cook on a low heat for 10 minutes.

Dough:
Add salt and butter to cake flour, mix through with your fingertips.

Then add the potato, mix through well so that the flour is crumbly.

Add the egg and water, then knead until the dough is nice and smooth.

Rest for 15 minutes.

Deep-fry at 160°C for 15 minutes.

Folding the Koeksusters
Roll the dough into long strings of about 30cm.

Cut them in half and fold the one point over the other.

Then it forms the koeksusters.

Whisk up the egg and brush the koeksuster.

Rest for 5 minutes and then deep-fry.
