Recipe for chewy Oatmeal and Cinnamon Cream Pies with a vanilla frosting filling

225g unsalted butter, at room temp
115g brown sugar
55g sugar
28g honey
1 egg
1 teaspoon vanilla
115g cake flour
55g oat flour (or finely ground oats)
170g rolled oats, whole
55g rolled oats, roughly ground
1½ teaspoon baking soda
½ teaspoon salt
225g vanilla frosting, recipe below

Vanilla frosting:
115g unsalted butter, at room temp
4 cups powdered sugar
1 teaspoon vanilla
1 tablespoon heavy cream

How to
Preheat an oven to 325F/160C.

Cream the butter with the sugars and honey until light and fluffy.

Add the egg and vanilla and mix until completely blended in and the mixture looks emulsified.

Add the flour, oat flour, oats, ground oats, baking soda, and salt. Mix until a dough comes together.

Scoop cookies onto lined baking sheets. Bake for 14-16 minutes, or until golden brown around the edges. Let cool before assembly.

In the meantime, prepare the frosting according to the instructions. Once the cookies are cooled, pipe or spread frosting on the bottom of one cookie. Too with another. Repeat.

Vanilla frosting:
Cream all of the ingredients together until light and fluffy.
