Recipe for Grilled Harders with spiced paprika butter and lemon

6 fresh harders, gilled & gutted & scaled
125 ml butter, melted
10 ml smoked paprika
5 ml chilli flakes
2 cloves garlic, finely grated
juice of a lemon (plus extra lemon wedges, to serve)
salt & pepper to taste

How to
Rinse the harders under running tap water and pat dry.

Use a sharp knife to score the skin on the fillet sides.

Mix the melted butter, paprika, chilli flakes, garlic and lemon juice. Season generously with salt & pepper.

Brush the butter mixture all over the harders, then braai them on a grid over medium-hot coals (turning often) for 8-10 minutes or until just cooked. Baste with the butter often.

Don’t overcook.

Serve warm.
