Easy vegetarian recipe for Baked Sweet Potatoes with feta, chilli, yoghurt and lime juice

1 sweet potato, washed
50g feta cheese – crumble
1/4 red onion, finely sliced
1/4 fresh chilli, deseeded, finely chopped
1/2 lime, halved, juiced
30ml plain yoghurt
3g fresh coriander, roughly chopped
1/2 tbsp olive oil (from your pantry)
salt & pepper (from your pantry)

How to
Pre-heat oven to 200°C.

Cut the sweet potato in half lengthways. Place on a baking tray, splash with olive oil and season with coarsely ground salt. Bake in the oven until tender – about 15 to 20 minutes.

Place the sweet potato on the serving plate. Now add red onion, chilli, a little lime juice, a dollop of yoghurt and chopped coriander. Lastly crumble the feta on top and add a few twists of coarsely ground black pepper.
