Quick and simple breakfast recipe for Eggs served with garlic bread toast
4 slices leftover garlic bread or 4 slices toasted ciabatta rubbed with garlic and herbs
2 tablespoons butter
2 tablespoons olive oil
4 large eggs
1 cup rosa tomatoes
A drizzle of olive oil for tomatoes
Salt and black pepper to taste
Tabasco or hot sauce to serve
Place leftover garlic bread slices under the grill for a few minutes to crisp up. Set aside.
Heat the butter and olive oil in a non stick pan and fry eggs to your liking. Season.
Arrange the tomatoes in an oven tray and drizzle with olive oil. Grill until wilted.
Arrange slices of garlic bread toast on plates, top with crispy fried egg, tomatoes and hot sauce.
