Recipe for creamy Green Goddess Vegan Dressing – add to a range of salads and veggies
2 large avocados
1 cup fresh basil packed
1 cup fresh mint packed
1/4 cup olive oil
1 cup almond milk
4 tablespoons coconut yogurt
1 clove garlic
2 tablespoons fresh lemon juice
1 tablespoon apple cider vinegar
salt and black pepper to season
Cut and peel the avos, and place it in your blender.
Follow with the rest of the ingredients.
Blend well, until smooth – you can add bits of water to thin it out if it is too thick. Serve with your choice of veggies or salad.
Keep in a glass jar for up to one week, refrigerated.
