Simple and delicious recipe for a filling Creamy Chicken and Rice Bowl

2 chicken breast fillets, pounded
chicken spice to season fillets
4 tablespoons of butter
1 cup fresh cream
2 tablespoons good quality mayonnaise
1 tablespoon hot sauce (any peri peri sauce of your choice)
1 tomato, finely chopped
1 red onion, finely chopped
3 cups cooked rice
salt and pepper to season
fresh basil to garnish

How to
First off, season the chicken breast fillets and fry until golden and cooked in butter.

Remove the meat from the pan and while on high heat – add the cream to the pan. Remove from heat and allow to reduce.

Add the mayonnaise and hot sauce, mix and allow to simmer for a few minutes more on medium heat. Set aside.

In a mixing bowl combine the chopped tomato and onion. Mix it through the cooked rice.

Serve the cooked chicken breasts with creamy sauce and salsa rice.
