Make this recipe for Coconut Lemon Protein Balls – perfect as a healthy snack on the go

1 cup almond meal
2 cups organic desiccated coconut (plus extra for rolling)
3 Tbsp. coconut butter
2 Tbsp. lucuma powder
1 Tbsp. chia seeds
1 tsp. vanilla powder
Zest of 1 lemon
1 Tbsp. lemon juice
1 Tbsp. stevia
1 scoop vanilla protein powder

How to
Blend all ingredients in the food processor, adding a bit of warm water to bind mixture as needed.

Roll into balls, then roll in extra coconut.

Will keep in the refrigerator for about a week.
