Recipe for crunchy Coconut and Choc Chip Cookies

1 1/4 cups all-purpose flour
1 tsp. baking soda
1 Tbs. Cocoa powder
1 tsp. salt
1/2 cup unsalted butter, softened
1 cup light brown sugar
2 Eggs
2 tsp. vanilla
2 cups sweetened flaked coconut or more
2 cups Chocolate chips, dark or semisweet

How to
Preheat oven to 375F/190C.

In a bowl mix together all purpose flour, baking soda, cocoa powder and salt.

In separate bowl whisk or use electric mixer to cream butter and sugars until they reach a point of fluffiness.

Add eggs, and mix them very well, then add in flour, baking soda, cocoa powder and salt mixture.

Add in vanilla and mix in coconut flakes and chocolate chips.

Drop dough with a Tablespoon a few inches apart onto already greased baking sheets and bake cookies until they reach golden brown color.

*I sprinkled several cookies before baking with coconut flakes and some after, but that is optional- I liked the coconut more toasted as it brings out the flavour.

Pull them out of the oven and cool on a baking sheet for few minutes, than transfer to racks to cool completely.
