South African Christmas recipe for Soetkoekies
750 ml (3 cups) cake flour
10 ml (2 tsp) Royal Baking Powder
3 ml ( 1/2 tsp) bicarbonate of soda
3 ml ( 1/2 tsp) salt
5 ml (1 tsp) ground mixed spice
10 ml (2 tsp) ground cinnamon
3 ml ( 1/2 tsp) ground ginger
2 ml ( 1/4 tsp) ground cloves
125 ml butter or margarine
310 ml (1 1/4 cups) white sugar
2 extra-large eggs
45 ml (3 Tbsp) sweet red wine or sherry
Sift flour and Royal Baking Powder, bicarbonate of soda, salt and spices together. Rub in butter with fingertips until mixture resembles fine breadcrumbs. Add sugar and mix well.
Whisk eggs and wine together. Add to dry ingredients and cut in with a knife. Knead lightly to a firm dough.
Roll out dough on a lightly floured surface to 3 mm thick. Cut out rounds with a cookie cutter 5 cm in diameter. Place on greased baking trays.
Bake in a preheated oven at 180C for 10-12 minutes.
Turn out onto wire racks to cool. Store in an airtight container.
Variation: Roll out two strips of dough, about 10cm long.
Twist the two together and shape into a circle. Makes about 40 twists.
