Quick to make and delicious to eat – try this recipe for Chocolate Jalapeno Cookies
115g unsalted butter, at room temperature
½ tsp. vanilla
140g all-purpose flour
40g unsweetened cocoa powder
½ tsp. baking soda
½ tsp. salt
¼ tsp. cayenne pepper powder
170g dark chocolate, chopped
30g fresh jalapeño, seeded and finely chopped
Preheat an oven to 350F/180C. Line two baking sheets with parchment paper
In the bowl of a stand mixer, or a large bowl, cream together the sugar and butter until light and fluffy, about 5 minutes (medium speed).
Add the egg and vanilla and mix in until combined, about 1 minute (medium speed). Scrape down the sides of the bowl as needed.
Add the flour, cocoa powder, baking soda, salt, and cayenne pepper. Mix until the dough just comes together, about 1 minute (low speed). Scrape down the sides of the bowl as needed.
Add the chopped chocolate and jalapenos. Mix until it is evenly distributed about 1 minute (low speed).
Spoon the dough onto the lined baking sheets, leaving at least an inch between each. Pat down each dough ball so it is about 1cm tall.
Bake in a preheated oven for 10 to 12 minutes, or until they are set and just begin to crack on the top.
Let cool on the baking sheet for a few minutes before moving the cookies to a cooling rack to cool completely.
