Whip up this recipe for simple Cherry-filled gluten free cookies
1 cup butter (at room temperature)
3/4 cup sugar
1 tsp vanilla
2 tbsps heavy cream
2 1/2 cups rice flour
1 tsp baking soda
1/2 tsp sea salt
1/2 cup dried cherries
1/2 cup white chocolate chips
Cream butter and sugar together until light and fluffy. Add eggs one at a time and mix until
combined. Stir in vanilla and heavy cream. Add flour, baking soda and salt and mix until
dough just comes together. Fold in cherries and chocolate chips.
Refrigerate for at least 4-6 hours, or overnight.
When ready to bake, preheat oven to 180 degrees.
Bake for 8-10 minutes, or until cookies are set and golden around the edges.
