Deliciously innovative recipe for Boerewors Quesadillas, with mozzarella and feta cheese

About 600 g Championship Boerewors
6 flour tortillas
250 g mozzarella cheese, grated
3 feta cheese rounds, crumbled
3 spring onions, coarsely chopped
Tabasco sauce to taste

How to
Preheat oven to grill.

Fry boerewors in a pan with little water until cooked and brown on both sides. Remove from pan and cut into 1 cm pieces.

Place three tortillas onto a greased baking tray, sprinkle with mozzarella, feta, spring onion and Tabasco sauce and place boerewors pieces on top. Place another tortilla on top of the filling of each of the 3 tortillas.

Grill until tortillas are slightly browned and cheese starts to melt. Turn the tortillas over and brown on other side. Remove from oven and cut into four slices.
