Try this recipe for Asian Lettuce Wraps this week.
500g lean pork mince
2 red onion – chop finely
2 red pepper – deseed and chop
2 cloves garlic – crush, peel and chop
2 tsp ginger – peel and grate finely
2 tbsp sambal oelek
4 tbsp soy sauce
8 tbsp hoisin sauce
1 tbsp rice vinegar
2 tsp xylitol
2 tbsp fresh coriander – chop coarsely
2 tsp dried onion flakes
2 stalks spring onion
2 heads lettuce
vegetable oil (from your pantry)
Place a few glugs of vegetable oil in a large frying pan on medium to high heat. Add the red onions, peppers, garlic and ginger and sauté until the onions become translucent, about 4 to 5 minutes. Now add the lean pork mince, breaking it up with a spoon and mixing it in to the other ingredients. Cook for about 6 to 8 minutes until the mince is nice and brown.
Then add the hoisin sauce, soya, rice wine vinegar, xylitol and sambal oelek. Turn the heat down to medium and let it cook for a further ten minutes stirring occasionally so it does not stick. Squeeze the lime over the cooked mince. Spoon the meat into a serving bowl and set aside.
To serve, place two lettuce leaves on each plate. Place some of the mince mixture onto each one, garnish with the fresh coriander, spring onion and onion flakes and roll up like a wrap.
