A healthy low fat recipe for Sweet Mashed Potatoes with Lemon-Garlic Steamed Cod

2-3 Medium Sweet Potatoes, unpeeled
1 Tbs. Butter
1/2 Cup Heavy Whipped Cream
2 Cod Fillets, or any other fish
1 Lemons, thinly sliced
1/4 Cup Cilantro
1/2 tsp. Crushed Red Pepper
Himalayan Crystal Salt to taste
4-5 Garlic cloves
1 Tbs. Butter, equally separated for fish

How to
In a large pot bring water to boil. While you are waiting wash and quarter the sweet potatoes. Drop in the boil pot of water and cover. Boil on med. high for 20 minutes or until you see skin is separating from potatoes and when you poke it with fork or knife it will penetrate smoothly. Drain and peel the potatoes, at this point skin should slide off. Add butter and whipped cream and mash until smooth.

Add 1 1/2 cups of water in large flat and wide frying pan or sauteing pan to boil. Place each fish fillet in a separate sheet of Aluminium foil and add lemon slices, cilantro, crushed red pepper, halved garlic cloves and sprinkle with probably 1/3 tsp of Himalayan salt. Add 1/2 Tbs. of butter in each package and wrap it so the air cannot escape when steaming. Place it in the boiling water, two should fit perfectly but you can do it in two pans. Steam for next 15 minutes if fish is not frozen and 25 minutes if frozen. Check if you need to add more water while fish is steaming in the Alum. foil packages. Water should measure middle of the pan or pot. Do not go over the top of the package.
