This quick easy and delicious savoury muffin is a great for anytime of the day and your lunchbox too
1-2 strip bacon (optional)
Spring onion, chopped
Green/red pepper, finely chopped (feel free to add spinach also)
2-3 large eggs
1 tbsp. milk
Salt & pepper, (paprika and garlic powder for extra flavour)
2 tbsp. White Star
Preheat oven to 180 degrees and grease ramekins with cooking spray/coconut oil or butter. In a large nonstick pan over medium heat, cook bacon until crispy then drain on a paper towel-lined plate, then crumble/chop into fine pieces.
In a small bowl, whisk eggs, milk, paprika, and garlic powder and season with salt and pepper. Add the White Star Instant Porridge and whisk gently before folding in spring onion, peppers, bacon, and cheese. Pour mixture into prepared ramekin.
Bake until cooked through and golden.
Enjoy hot out of the oven.
