Any Fish Fillets
Heat your pan over a high temperature
Season the fish fillets with salt
Add the oil to the hot pan.
When the oil is hot place the fish skin side down into the pan
After about 90 seconds use a fish slice to flip the fillets over and then turn the heat off. The pan will still have enough residual heat in it to cook the rest of the fish, leave the fish in the pan for about another minute.
The fish is then ready to serve
