Spoil mom with one of these yummy brunch recipes for Mother’s Day.

Baked breakfast buns

*Makes 3

You can make these buns with fillings of your choice. This recipe was made using bacon, egg and cheese. You can also substitute the bacon with cherry tomatoes for a vegetarian option.


  • 1 pack Sasko Jumbo Sesame White Bread Buns
  • 200g streaky bacon or 200g cherry tomatoes, halved
  • 3 extra-large eggs
  • 60g Gouda or Cheddar cheese, grated
  • Fresh parsley (if desired)
  • Salt and pepper


  1. Preheat the oven to 180°C.
  2. Place the bacon or the cherry tomatoes onto a baking tray (season the cherry tomatoes with salt and pepper and drizzle with olive oil). Bake for about 15 minutes until the bacon is crisp or the tomatoes have softened.
  3. Cut the tops of the buns off and scoop out the bread from the centre to create ‘bread bowls’ and place onto a baking tray.
  4. Divide the bacon/tomatoes between the buns to form the bottom layer.
  5. Crack an egg into each bun and top with equal amounts of cheese.
  6. Season with salt, pepper and fresh parsley.
  7. Bake in the oven for 20 minutes or until the buns are golden brown and the eggs are cooked to your liking (place the lids on the buns for the last 5 minutes to crisp up.)
  8. Serve hot.

Ultimate French toast

*Serves 2


  • 3 extra-large eggs
  • 100ml cream
  • 4 slices Sasko plus Rosehip and Honeybush Brown Bread
  • 2 large or 4 small bananas
  • Butter for frying

To serve

  • Honey
  • Cinnamon
  • 100g blueberries
  • Whipped cream


  1. In a bowl, whisk the eggs and cream together.
  2. Halve the bananas lengthways.
  3. Melt a tablespoon of butter in a non-stick frying pan on medium heat and fry the bananas, turning once, until golden and just softened. Set aside.
  4. Wipe the pan down with paper towel and place it back on the heat and add a little more butter.
  5. Soak both sides of the bread in the egg mixture on both sides for a few seconds before frying in the pan, turning once, until golden brown.
  6. Place two slices of French toast onto each plate, drizzle over a generous amount of honey and top with fried bananas, a sprinkling of cinnamon and blueberries and a dollop of whipped cream.

Quiche bread baskets

*Makes 12


  • 12 slices Sasko Premium Brown Bread, crusts removed
  • 150g butter, softened
  • 200g baby spinach, cooked
  • 200g feta cheese
  • 3 extra-large eggs
  • 150ml cream
  • Pepper


  1. Preheat the oven to 180°C.
  2. Flatten each slice of bread by rolling it with a rolling pin.
  3. Butter each slice and gently press it into a muffin tray, butter side down, to form little cups.
  4. Bake in the oven for 15 minutes to toast the bread.
  5. Take out and set aside. (If there are holes in your bread cups, the quiche mixture will leak through and they will stick to the muffin tray, so use extra pieces of bread and butter to seal them.)
  6. Squeeze out all of the excess water out from the spinach and chop.
  7. Place the spinach in a bowl, crumble in the feta and stir to combine.
  8. Mix the eggs, cream and a pinch of pepper together in another bowl.
  9. Spoon half of the spinach and feta mixture into the bread cups and fill with equal amounts of the egg mixture (without spilling it over the sides). Finish by topping with the remaining spinach and feta mixture.
  10. Bake in the centre of the oven for 25 minutes, or until the quiches have just set.
  11. Allow to cool for 10 minutes before loosening from the muffin tin with a knife and serving.

Note: You can reheat the quiches in the oven if you want to serve them later.
