Recipe for crisp Sweetcorn Cheese Puffs with a perfectly light and fluffy centre
250g Snowflake flapjack Easymix
1 extra-large egg
160ml milk or water
410g can of sweetcorn kernels, drained
50g grated mozzarella or Cheddar cheese
Cooking oil for deep frying
Paprika for sprinkling
Place Easymix in a mixing bowl. Lightly beat egg, oil and milk together. Add to the Easymix and whisk until batter is smooth, thick and lump-free.
Add corn kernels and cheese, and fold in lightly.
Heat oil in a small, heavy-based saucepan. Gently drop heaped tablespoons of the mixture into hot oil and deep fry until golden.
Remove from oil and drain on paper towel.
Sprinkle with paprika and serve.
For a little more bite: add a teaspoon of finely chopped chillies to the mixture before frying.
