Recipe for Spaghetti Pie – a new and even simpler twist to pasta for dinner
1 tsp olive oil
half an onion, sliced
100g bacon or Chouriço
salt and pepper
200-300g leftover spaghetti (or whatever you have) – cooked
additional ingredients: baby tomatoes, sun dried tomatoes, olives, cheeses, spring onions, green beans, broccoli, spinach and herbs etc.
Preheat the oven to 180C.
Slice the onion and fry in some olive oil with the bacon/Chouriço until cooked but not too crispy.
In a bowl, beat the eggs and add your choice of additional cooked or raw veg.
Add the bacon/Chouriço, grated cheese and spaghetti.
Season well and pour into a well greased dish.
Cook in the oven for 25-30 minutes until the centre is no longer wobbly and serve either hot or cold.
