Cape Town inspired recipe for Smoked Fish and Feta Phyllo Pastry Pie! You can use smoked snoek, angelfish, mackerel, haddock or a combination of smoked fish for this recipe…

50 ml melted butter OR use olive oil spray
6 sheets phyllo pastry
1 large onion, chopped
10 ml olive oil
salt and freshly ground black pepper to taste
125 g Cheddar cheese, grated
125 g crumbled feta
300 g flaked smoked fish (about 375 ml)
3 eggs
200 ml milk
50 ml fresh cream

How to
Preheat the oven to 180 °C.

Brush the melted butter on each sheet of phyllo pastry and stack the sheets on top of one another (if you are using olive oil spray, spray each sheet with the
olive oil spray and stack the sheets on one another). Line a 22-cm pie dish with the pastry – you can fold the pastry to fit the dish, allowing it to overhang slightly
to give an interesting appearance.

Sauté the onion in the oil in a frying pan on medium heat and season to taste.

Place the cooked onion, Cheddar cheese, feta and smoked fish in the lined pie dish.

Beat the eggs, milk and cream together, season and pour over the fish.

Bake in the preheated oven for about 25 minutes.

Serve immediately with a salad for a light and healthy meal.
