Budget-friendly doesn’t have to mean unhealthy of low nutrient. Get all the nutritional goodness of lentils with this hearty and delicious dish.
Ingredients:
10ml olive oil
8 rashers streaky bacon, chopped
1 medium onion, chopped
250ml brown lentils, soaked for 30 minutes
2 carrots, peeled and sliced
2 celery sticks, sliced
30ml chopped fresh thyme
8 pork sausages, grilled
400ml hot vegetable stock
250ml crème fraîche or cream
How to:
1. Heat the oil in a frying pan over medium heat.
2. Stir-fry the bacon and onion and cook for 5 minutes.
3. Add the lentils, carrots, celery and thyme, and fry for another 5 minutes, stirring occasionally.
4. Pour in the stock and simmer for 20 minutes until the lentils are cooked through. You may need a little more water as the lentils absorb the liquid.
5. Stir in the crème fraîche or cream and simmer for another 10 minutes.
6. Add the grilled sausages, season to taste, and serve.
