Recipe for Sweet Potato Salad with Thai Sweet Chilli Sauce

1 kg Sweet Potatoes (Scrubbed – not peeled)
125ml Thai Sweet Chilli Sauce (Wellingtons is good)
1/2 bunch fresh Coriander, washed and roughly chopped
olive oil
sea salt & freshly ground black pepper

How to
Preheat oven to 200 C

Cut sweet potatoes lengthways into 4 depending upon size

Season and drizzle with olive oil and roast for 30 minutes until golden and crisp

Once out of the oven pour over the sweet chilli sauce, a little olive oil and seasoning

Toss together with half the coriander, scrape into a bowl and garnish with remaining coriander.
