Recipe for Spicy Roast Butternut, Feta and Olive Salad – with spinach and red wine vinegar dressing
3 Tbsp Olive Oil
20 pitted olives
1/2 tsp ground coriander
1/2 tsp cayenne pepper (optional)
800 g butternut cut into cubes
salt and ground pepper
100g spinach leaves
150g crumbled feta
For the dressing:
1 Tbsp Red wine vinegar
60 ml Olive Oil
1 small onion (finely sliced into rings) (use Red Onion if you can)
Mix olive oil, coriander, cayenne and salt and pepper in a bowl.
Toss in cubed butternut and coat well
Transfer to a roasting pan and baked for 30 mins or until butternut is tender and slightly cararmelised.
Whisk all the dressing ingredients together until combined. Allow to Cool.
Place Spinach on Serving Platter.
Scatter Feta Butternut and Olives on top
Drizzle with the Salad Dressing.
