Recipe for spicy Chilli Con Carne Pasta with lots of mozzarella cheese. A quick and simple weekday dinner  that isn’t short on taste and flavour.

Beef mince
1 onion chopped
1 can of crushed tomotoes
ginger garlic
1 tsp tomato paste
1 can of red kidney beans
250 gr of boiled pasta
lots and lots of grated mozzarella

How to
Braise your onions in a little oil. Add your mince and brown nicely. Then add your spices, ginger and garlic (add any spices you like, I added chilli, cumin, leaf masala).

Add your tomatoes and paste and a sprinkling of sugar and let your mince simmer slowly for a few hours. This really develops the taste of the mince.

Add your beans and pasta.

Pour into a casserole dish and add your mozzarella. Just heat in oven until cheese has melted.

When I made it again, I added a jar of Ina Paarman creamy cheese pasta sauce and it really was divine. I then cut down on the cheese. Her sauces are all Halaal.
